LUNCH – MIX VEGETABLE

IRON FOCUSSED INGREDIENTs - Beetroot, Broccoli
INGREDIENTS
  • ½ cup blanched carrot
  • ½ cup blanched baby corn
  • ½ cup blanched beetroot
  • ½ cup blanched broccoli
  • ¼ cup chopped capsicum
  • 2 tomatoes , blanched, peeled and grated
  • ½ cup onion cubes
  • 1 to 2 green chillies, chopped
  • 1 ½ tsp chopped adrak
  • 1 ½ tsp chopped lehsun
  • 1 tbsp ajwain
  • 2 tsp cornflour(makke ka aata)
  • 1 tsp tomato chilli sauce
  • 1 tsp oil
  • salt to taste
METHOD
  • Heat the oil in a non-stick pan, add the onion, green chillies, adrak, lehsun and ajwain and mix for a few minutes.
  • Add the grated tomatoes and salt and mix it over a medium flame for 4 to 5 minutes, till it thickens.
  • Add all the remaining vegetables and mix for a few seconds.
  • Combine the makke ka aata and tomato-chilli sauce with ½ cup of water and add it to the mixture.
  • Bring to a boil for 4 to 5 minutes till the sauce thickens.
  • Add salt.
  • Serve hot
